Zesty Orange Mango Salad – Vegetarian, Vegan
  • 2 cups diced mangos
  • 3 oranges peeled, sectioned and diced into thirds (before you slice the oranges, zest each one and set the zest aside)
  • The zest from three oranges see above
  • 2 chopped jalapeno- seeded and ribs removed*
  • 2 roma tomatoes diced
  • 1 small onion (not red), diced
  • the juice of 2 limes
  • generous amounts of salt and pepper if you are on a no salt diet, you can skip – but don’t skip the pepper!
  • About 2-3 cups fresh arugula or any large-leaf lettuce washed and dried
  1. Add everything to a bowl. Season generously with pepper and lime juice and optional salt.
  2. Serve over peppery arugula and top with the orange zest.
Recipe Notes

*Removing the ribs from the jalapenos greatly reduces the heat, even more so than the seeds!
