The Best Immune Boosting Garlic Broth

  • 2 heads of garlic
  • 2 quarts of Veggie Broth you know my all-time favorite is Zoup, and you can now order it on their website
  • Any variation of the following:
  • 3-4 bunches of scallions
  • 2-3 leeks green parts cut off
  • a quarter of a sweet onion I do not recommend red onions!
  • a handful of whatever herbs you have in your fridge. I used cilantro.  But feel free to use whatever you have on hand.
Optional ingredients:
  • Mushrooms
  • Carrots (see my note below about adding carrots)
  • Cooked noodles
  1. In a large soup pot, add a few tablespoons of the veggie broth. Break apart your first head of garlic, peel the bulbs and smash slightly. Add to the broth and saute for 5-8 minutes, just until golden. You might need to add additional broth during the browning process.
  2. After the garlic has turned golden, add the rest of your broth, and any variations of veggies and onions you want to include. Add the second head of garlic, halved cross-wise (no need to peel).
  3. Bring the broth and ingredients to a boil. Turn down the heat just a bit and gently boil until broth is slightly reduced.
  4. Strain your broth or use a wide slotted spoon to fish out the garlic and herbs.

*You can also add noodles at this point (I prefer rice noodles) or serve piping hot as is (my favorite!

*I have made this broth with carrots, and it drastically changes the taste. Personally I love carrots and the taste did not bother me, but unless you love carrots, I would leave them out.
