Zesty Orange Mango Salad -Vegetarian, Vegan

Have  you ever though of combing mangoes and oranges, with oodles of pepper and orange zest? Well let me tell you I happened upon this by accident trying to empty the fridge last week and it is amazing! Light and refreshing, with a zing provided by jalapenos and pepper. Serve over fresh arugula or large lettuce leaves.

Zesty Orange Mango Salad – Vegetarian, Vegan

 

Ingredients:

2 cups diced mangos

3 oranges, peeled, sectioned and diced into thirds (before you slice the oranges, zest each one and set the zest aside)

The zest from three oranges (see above)

2 chopped jalapeno- seeded and ribs removed*

2 roma tomatoes, diced

1 small onion, (not red), diced

the juice of 2 limes

generous amounts of salt and pepper (if you are on a no salt diet, you can skip –  but don’t skip the pepper!)

About 2-3 cups fresh arugula or any large-leaf lettuce, washed and dried

Instructions:

Add everything to a bowl. Season generously with pepper and lime juice and optional salt.

Serve over peppery arugula and top with the orange zest.

*Removing the ribs from the jalapenos greatly reduces the heat, even more so than the seeds!
