Fourth of July Tecate Steak Tacos

I’m a vegetarian but the men in my house aren’t, so every so often I have to make a dish just for them. I was attracted to this recipe for the name: Tecate and Steak.  Who does not like steak and beer?

And combining the two – marinating the steak in the beer  – is nothing short of genius.

This recipe is adapted from a Bon Appétit reader request to replicate a recipe the reader fell in love with at The Mission restaurant in Scottsdale, Arizona. (say that ten times fast)

I have changed it up a bit but the taste is still the same – amazing.

Fourth of July Tecate Steak Tacos

1 to 2 pounds of steak, cut into thin strips (we used skirt)

One 12 ounce can pale lager (such as Tecate)

2 Tbsp. fresh lime juice

1 tsp. salt

1/4 tsp. freshly ground black pepper

1/2 medium onion, chopped

One red or yellow pepper, chopped

2 garlic cloves, thinly sliced

2 chilis from a can of chipotle chili in adobe sauce,

coarsely chopped
2 large plum tomatoes, chopped

3 Tbsp. Chopped Cilantro

8 corn or flour tortillas (we used whole wheat)

Combine steak, beer, one Tbsp. lime juice, 1 tsp salt and 1/4 tsp. pepper in a resealable plastic bag.  Seal; chill 2-3 hours.

This dish can be grilled, but I really think it works (and tastes) best in a cast iron skillet. Saute onion and garlic in a skillet or grill over medium heat until translucent.
Add beef (discard marinade) to onion and garlic and grill or saute for approximately 5-10 minutes or until almost cooked through; add red or yellow peppers, garlic, tomatoes, and chilis.  Saute for another 3-5 minutes.

Remove all ingredients from skillet and turn heat up to medium-high.  Heat tortillas through on both sides in hot skillet.

Make your tacos:  Add steak mixture to the tortillas and top with tomatoes, cilantro, avocado, and anything else your heart desires – i.e., sour cream, salsa, chopped
mango, etc.

 I had mine sans steak and they were awesome.

Serve with your favorite brew.

I am heading to San Diego to help my daughter pull her apartment together. Her things have finally arrived so we will be hitting up flea markets, shopping and decorating our hearts out.  And having brunch together every day 🙂
