I thank my dad for my love of vegetables. We had a huge vegetable garden growing up in our little house in Maryland. A sweet square of land that he and I dug up and planted together. We grew lettuce, tomatoes, peppers and my favorite – cucumbers. The vegetable harvest brought with it an abundance of fresh salads…and turtles. I knew the turtles were eating the lettuce so I had to provide an alternative home for them. I would keep my turtle friends in shoe boxes (one to a box) and feed them lettuce for about a week, then my dad and I would go to a field close to a farm and set them free. It was hard to let them go, but I knew the next week he, or one of his friends, would find a way back to my little vegetable garden.
This highlight of this salad is of course the fresh cucumbers, but the peppery Arugula makes the dish. You can also add tomatoes if you so desire.
