This is my favorite “go-to” salad. I threw this together one day when I wanted something fresh tasting and healthy to eat. I eat a huge bowl of this because it is very low calorie and the beans will meet your protein requirements for the day. I don’t measure ingredients for this, it is more to taste, but will provide them for you for a point of reference. Feel free to adjust to your liking. Makes a family-sized serving.
Lemony White Bean and Arugula Salad
5 cups packed arugula, rinsed
1 can cannellini beans, rinsed and drained
1/2 small red onion, thinly sliced
3 teaspoons capers
1 teaspoon sunflower seeds (optional)
3 tablespoons fresh lemon juice (adjust to taste)
1 teaspoon lemon zest
freshly ground black pepper
1/2 teaspoon maple syrup (start with less)
1/2 cup shaved Parmesan
Combine everything in a big bowl, top with Parmesan.
