Fabulous Fall Detox Salad

The talk these days on the health front is about “detoxing” and “cleansing”, and in my opinion, we should be eating that way every day. And I don’t mean living on smoothies either, I mean eating a plant-based, whole-foods diet.  A diet that will be kind to our bodies. A diet that makes us wake up the next day and feel awesome.

I have adapted this recipe from a fabulous food blog, OhSheGlows.  If you have not been to her blog, you are missing out!  It is a must read and you will always find something there you love.

I always make this salad in the Fall when I can find Honey Crisp Apples at the market!

Fabulous Fall Detox Salad

Approx. 19 brussels sprouts, washed and stems removed

Two large carrots, peeled

1 apple, diced (I use Honey Crisp)

1 large celery stalk, diced

1/2 cup sunflower seeds (you can use salted!)

the juice from one lemon

pure maple syrup, to taste

salt (optional) and pepper

Using the grate/shred blade on your food processor, process the brussels sprouts and carrots. Transfer to a large mixing bowl.

Stir in the diced apple, celery, and sunflower seeds.

Add the lemon juice, salt (optional) and pepper, Add a small amount of maple syrup (about 1/2 teaspoon) to take the edge off the lemon juice.  Sprinkle with cinnamon if desired (I did not!)

Serve and enjoy!
